Delicious Easy Chicken Satay Curry Recipe For A Quick Dinner

Ingredients

– 500 g chicken thighs, diced
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, sliced
– 400 ml coconut milk
– 2 tbsp curry paste
– 1 tbsp soy sauce
– 1 tbsp vegetable oil
– 1 tsp brown sugar
– Cooked rice, to serve

Method

1. Heat the vegetable oil in a large pan over medium heat.
2. Add the chopped onion and minced garlic, cooking until soft.
3. Stir in the chicken pieces and cook until they are browned on all sides.
4. Mix in the curry paste, sliced red bell pepper, and coconut milk.
5. Allow the mixture to simmer for about 15 minutes. Add soy sauce and brown sugar before serving with rice.
