Ingredients
– 4 cups vegetable broth
– 2 ripe avocados

Method
1. Pour the vegetable broth into a large pot and bring it to a simmer.
2. Add the chopped onion and minced garlic to the pot. Cook these until the onion becomes soft.
3. Stir in the diced tomatoes, ground cumin, salt, and pepper. Let the mixture simmer for another 5 minutes.
4. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocados with lime juice until smooth.
5. Serve the soup in bowls topped with mashed avocado and a sprinkle of fresh cilantro.
