Ingredients
– 300 g frozen abalone (or fresh if available)
– 1 whole chicken (about 1.5 kg), cut into pieces
– 3 cm ginger, sliced
– 2 spring onions, chopped
– 1.5 liters water
– 1 teaspoon salt
– 1 tablespoon soy sauce
– 1 tablespoon cooking oil
– 1 small carrot, sliced
– 1 handful of mushrooms, sliced
Method
1. Heat the cooking oil in a large pot over medium heat.
2. Add the chicken pieces and stir-fry until they are lightly browned.
3. Toss in the ginger and spring onions, then cook for another minute.
4. Pour in the water, add the salt, soy sauce, carrot, abalone, and mushrooms.
5. Bring the soup to a boil, then reduce the heat and simmer for 45 minutes.
