Dudhi Daal Gosht (Mutton with Bottle Gourd and Lentils)
Ingredients
– 500 g mutton, cut into pieces
– 300 g bottle gourd, diced
– 1 cup split yellow lentils (dal)
– 2 medium onions, finely chopped
– 2 medium tomatoes, chopped
– 1 tablespoon ginger-garlic paste
– 1 teaspoon turmeric powder
– 1 teaspoon cumin seeds
– 2 tablespoons vegetable oil
– Salt to taste
Method
1. Heat the oil in a large pot over medium heat. Add the cumin seeds and let them splutter for a few seconds.
2. Stir in the chopped onions and cook until they become soft and golden brown. Add the ginger-garlic paste and sauté for another minute.
3. Incorporate the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes soften and the oil separates from the mixture.
4. Add the mutton pieces to the pot. Stir well, ensuring the meat is coated with the spices. Cook for about 5 minutes while stirring occasionally.
5. Pour in 4 cups of water and bring it to a boil. Then add the lentils and diced bottle gourd. Lower the heat, cover the pot, and simmer for 45 minutes until the mutton is tender, checking occasionally to stir.
