Delicious Double Chocolate Fennel Buckwheat Crinkle Cookies Recipe

Ingredients
75 g buckwheat flour
30 g cocoa powder
1 tsp baking powder
1/2 tsp salt
40 g coconut oil (melted)
100 g maple syrup
1 tsp vanilla extract
100 g dark chocolate (chopped)
1 small fennel bulb (finely chopped)
60 g walnuts (chopped)

Method
Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
Mix the buckwheat flour, cocoa powder, baking powder, and salt in a bowl.
In a separate bowl, combine melted coconut oil, maple syrup, and vanilla extract.
Stir the wet ingredients into the dry mixture until combined. Then fold in the chopped chocolate, fennel, and walnuts.
Scoop tablespoons of dough onto the prepared baking tray, leaving space between each. Bake for 10-12 minutes until the edges are set.
