Ingredients
– 2 cups all-purpose flour
– 1 cup granulated sugar
– 1 cup unsalted butter, softened
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup mixed berries (fresh or frozen)
– 1 cup whipped cream
– Icing sugar for dusting
Method
1. Preheat the oven to 180°C. Grease a cake tin and line it with baking paper.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
4. Combine the flour, baking powder, and salt in another bowl. Gradually mix this dry mixture into the wet ingredients until evenly combined.
5. Fold in the mixed berries gently. Pour the batter into the prepared tin. Bake for 30–35 minutes, or until a toothpick comes out clean. Allow to cool before serving with whipped cream and a dusting of icing sugar.
