Method
1. Heat the olive oil in a large pot over medium heat.

4. Pour in the vegetable broth and bring it to a boil. Reduce heat and let it simmer for about 15 to 20 minutes, or until the potatoes are tender.
5. Use a blender to puree the soup until smooth. Stir in the coconut milk and garnish with fresh parsley before serving.
