Ingredients

– 200 ml coconut milk

Method
1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, cooking until soft and fragrant.
3. Stir in diced potatoes and carrot, mixing well.
4. Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes until veggies are tender.
5. Blend the soup until smooth, then stir in coconut milk, seasoning with salt and pepper.
