Ingredients
– 400g gnocchi
– 250g Italian sausage (remove skin)
– 1 tbsp olive oil
– 500ml diced tomatoes (canned)
– 200ml vegetable broth
– 2 cups baby spinach
– 1 tsp Italian herbs
– 2 cloves garlic (minced)
– Salt and pepper to taste
– Fresh basil leaves (for garnish)
Method
1. Start by cooking the gnocchi according to package instructions. Drain and set it aside.
2. Heat olive oil in a large pan over medium heat. Add sausage pieces and cook until browned.
3. Stir in the minced garlic and cook for about 1 minute until fragrant.
4. Pour in the diced tomatoes and vegetable broth. Season with Italian herbs, salt, and pepper. Let simmer for 10 minutes.
5. Add the spinach and cooked gnocchi. Mix gently until everything is heated through. Serve warm and garnish with fresh basil.
