Delicious Curry Fried Quinoa Rice Recipe: A Healthy Twist

Ingredients

– 1 cup quinoa
– 2 cups water
– 2 tablespoons oil
– 1 onion, chopped
– 1 carrot, diced
– 1 bell pepper, diced
– 1 cup green peas (frozen or fresh)
– 2 tablespoons curry powder
– Salt to taste
– Fresh coriander for garnish

Method

1. Rinse the quinoa under cold water to remove any bitter coating.
2. In a saucepan, bring the water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce the heat, cover, and cook for about 15 minutes, or until the quinoa is fluffy and the water is gone.
3. Heat oil in a large pan over medium heat. Add chopped onion, carrot, and bell pepper. Sauté for around 5 minutes until they soften.
4. Stir in the cooked quinoa, green peas, curry powder, and salt. Mix everything well, cooking for another 3 to 4 minutes until heated through.
5. Serve hot, garnished with fresh coriander.
