Ingredients
3 cups cooked chicken, shredded
1 cup Greek yogurt
½ cup celery, chopped
½ cup grapes, halved
¼ cup almonds, chopped
2 tablespoons curry powder
1 tablespoon honey
1 tablespoon lemon juice
1 teaspoon salt
½ teaspoon black pepper
Method
1. In a large bowl, mix the Greek yogurt, curry powder, honey, lemon juice, salt, and black pepper until smooth.
2. Add the shredded chicken, chopped celery, halved grapes, and chopped almonds to the bowl.
3. Stir everything together until all ingredients are coated with the yogurt mixture.
4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to develop.
5. Serve the curry chicken salad on bread, wraps, or over a bed of greens.
