Method
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion becomes soft.
3. Stir in the curry powder and cook for an additional minute.
4. Add diced sweet potatoes, red lentils, coconut milk, and vegetable broth. Simmer until the sweet potatoes are tender.
5. Season with salt. Serve warm.
