Ingredients
– 2 large cucumbers
– 1/4 cup almond butter
– 2 tablespoons rice vinegar
– 1 tablespoon honey
– 1 tablespoon soy sauce
– 1 tablespoon sesame oil
– 1/4 teaspoon garlic powder
– 1/4 teaspoon black pepper
– 1/4 cup chopped fresh coriander
– 1/4 cup sliced almonds
Method
1. Wash and slice the cucumbers into thin rounds.
2. In a medium bowl, mix almond butter, rice vinegar, honey, soy sauce, sesame oil, garlic powder, and black pepper. Stir until smooth.
3. Pour the dressing over the cucumber slices. Toss gently to coat all of them evenly.
4. Add the chopped coriander and sliced almonds to the bowl. Mix everything together carefully.
5. Serve immediately or chill in the fridge for about 30 minutes before enjoying.
