Creamy Thai Sweet Potato Curry Recipe
Ingredients
1 large sweet potato, diced
1 can (400 ml) coconut milk
1 cup vegetable broth
1 tablespoon red curry paste
1 tablespoon soy sauce
1 tablespoon olive oil
1 teaspoon ginger, minced
1 teaspoon garlic, minced
1 cup spinach, chopped
Juice of 1 lime
Method
Heat olive oil in a large pot over medium heat.
Add ginger and garlic, cooking for about 1 minute until fragrant.
Stir in diced sweet potato, coconut milk, vegetable broth, red curry paste, and soy sauce.
Simmer for 15-20 minutes, or until the sweet potato is tender.
Mix in spinach and lime juice, then cook for an additional 2 minutes.
