Ingredients
– 1 cup of arborio rice
– 4 cups of milk
– 1 cup of sugar
– 1 teaspoon of vanilla extract
– ½ teaspoon of salt
– 1 ripe mango
– 2 tablespoons of lemon juice
– 2 tablespoons of water
– 2 tablespoons of cornstarch
– 1 tablespoon of butter
Method
1. Begin by rinsing the arborio rice under cold water until the water runs clear.
2. Combine the rice, milk, sugar, salt, and vanilla extract in a large saucepan. Cook over medium heat, stirring regularly until it boils.
3. Once boiling, reduce the heat to low. Cook for about 25 minutes or until the rice is tender and creamy. Stir occasionally to prevent sticking.
4. Peel and chop the mango. Blend it with the lemon juice, water, and cornstarch until smooth to create the mango coulis.
5. Stir in the butter into the rice pudding after cooking. Serve the pudding warm with a drizzle of mango coulis on top.
