Delicious Creamy Rice Pudding With Mango Coulis Recipe

Ingredients

– 1 cup rice
– 4 cups milk
– ½ cup sugar
– 1 teaspoon vanilla extract
– ½ teaspoon salt
– 2 ripe mangoes
– 2 tablespoons water
– 1 tablespoon lemon juice
– 1 tablespoon cornflour
– 1 tablespoon butter

Method

1. Rinse the rice under cold water until the water runs clear.
2. Combine the rice, milk, sugar, vanilla, and salt in a pot. Stir everything together and heat over medium heat.
3. Once it starts to boil, reduce the heat and let the mixture cook for about 25 minutes. Stir occasionally until the rice softens and the pudding thickens.
4. While waiting, peel the mangoes and chop them into pieces. Blend the mango with water, lemon juice, and cornflour until smooth.
5. Serve the rice pudding warm, drizzled with mango coulis and topped with a little butter.
