Creamy Potato Salad with Chorizo Recipe

Ingredients
1 kg potatoes
150 g chorizo sausage
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup diced red onion
1/4 cup chopped fresh parsley
1/2 tsp garlic powder
Salt to taste
Pepper to taste

Method
1. First, wash and peel the potatoes. Cut them into small cubes.
2. Boil the potato cubes in salted water for about 10-15 minutes until they are tender.
3. While potatoes are cooking, slice the chorizo and cook it in a pan over medium heat until browned.
4. Drain the potatoes and place them in a large bowl. Add the cooked chorizo, mayonnaise, sour cream, red onion, parsley, garlic powder, salt, and pepper.
5. Mix everything gently until well combined. Chill in the fridge for at least 30 minutes before serving.
