Creamy Polenta with Mushrooms Recipe
Ingredients
1 cup polenta
4 cups vegetable broth
2 tablespoons butter
1 cup mushrooms, sliced
1 small onion, chopped
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated cheese
Salt to taste
Pepper to taste
Method
1. In a large pot, bring the vegetable broth to a boil. Slowly whisk in the polenta.
2. Reduce the heat and cook for about 20 minutes, stirring occasionally until thickened.
3. While the polenta cooks, melt butter in a skillet over medium heat. Add chopped onion and sauté until soft.
4. Stir in minced garlic and sliced mushrooms. Cook for approximately 5 minutes until the mushrooms are tender.
5. Combine the cooked polenta with cream, salt, pepper, and cheese. Stir well and serve topped with mushroom mixture.
