Ingredients
– 300g pasta
– 2 cups mushrooms, sliced
– 1 onion, chopped
– 2 cloves garlic, minced
– 250ml heavy cream
– 1 cup vegetable broth
– 1 cup spinach
– ½ cup grated cheese
– 1 tablespoon olive oil
– Salt and pepper to taste
Method
1. Cook the pasta according to the package instructions. Drain and set aside.
2. Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until soft.
3. Stir in garlic and sliced mushrooms. Cook until mushrooms are browned.
4. Pour in vegetable broth and heavy cream. Let the mixture simmer for a few minutes until thickened.
5. Mix in spinach and cheese. Combine everything with the pasta, then season with salt and pepper. Serve warm.
