Ingredients
– 500 g chicken breast, diced
– 1 tablespoon olive oil
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 carrot, diced
– 1 celery stalk, diced
– 800 ml chicken broth
– 300 g tortellini
– 250 ml cream
– Salt and pepper to taste
Method
1. Heat the olive oil in a large pot over medium heat. Add the diced chicken and cook until lightly browned.
2. Stir in the chopped onion, minced garlic, carrot, and celery. Cook for about 5 minutes until the vegetables soften.
3. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes.
4. Add the tortellini and simmer for another 5 minutes until they are cooked through.
5. Stir in the cream and season with salt and pepper. Let it heat through before serving.
