Ingredients
– 500 g chicken breast, diced
– 350 g gnocchi
– 400 g canned diced tomatoes
– 240 ml heavy cream
– 1 onion, diced
– 2 cloves garlic, minced
– 2 cups spinach
– 1 teaspoon Italian seasoning
– 2 tablespoons olive oil
– Salt and pepper to taste
Method
1. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until it becomes soft.
2. Stir in the minced garlic and diced chicken. Cook the chicken until it turns golden brown and is no longer pink inside.
3. Pour in the canned diced tomatoes, then add the heavy cream and Italian seasoning. Mix well and simmer for about 5 minutes.
4. Meanwhile, cook the gnocchi according to the package instructions. Drain and set aside once cooked.
5. Add the cooked gnocchi and spinach to the sauce. Stir everything together and season with salt and pepper to taste. Cook for a few more minutes until the spinach wilts.
