Creamy Cauliflower and Potato Soup Recipe
Ingredients
1 large cauliflower, chopped
3 medium potatoes, peeled and diced
1 large onion, chopped
3 garlic cloves, minced
1 liter vegetable broth
250 ml cream
1 tablespoon olive oil
Salt, to taste
Pepper, to taste
Fresh parsley, for garnish
Method
Heat olive oil in a large pot over medium heat.
Add onion and garlic, cooking until soft.
Stir in potatoes and cauliflower, cooking for a few minutes.
Pour in vegetable broth and bring to a boil.
Once vegetables are tender, blend until smooth. Stir in cream, salt, and pepper.
