Delicious Cranberry Swirl Bundt Cake Recipe For The Holidays

Ingredients

– 1 cup of fresh or frozen cranberries
– 1 cup of sugar
– 1 teaspoon of vanilla extract
– 1/2 cup of unsalted butter, softened
– 2 large eggs
– 1 1/2 cups of all-purpose flour
– 1/2 teaspoon of baking powder
– 1/4 teaspoon of salt
– 1/2 cup of milk
– Icing sugar for dusting

Method

1. Preheat the oven to 175°C and grease a bundt pan.
2. Combine the cranberries and 1/2 cup of sugar in a mixing bowl. Stir in the vanilla extract and set aside.
3. In another bowl, cream together the butter and remaining sugar until fluffy. Add the eggs one at a time, mixing well after each.
4. Gradually blend in the flour, baking powder, and salt. Pour in the milk and mix until just combined.
5. Pour half of the batter into the greased pan. Spoon in the cranberry mixture and top with the remaining batter. Bake for about 60 minutes or until a skewer comes out clean.
