Ingredients
– 250 g fresh cranberries
– 1 small red onion, chopped
– 1 red pepper, diced
– 1-2 jalapeño peppers, seeded and chopped
– 2 tablespoons fresh lime juice
– 2 tablespoons fresh cilantro, chopped
– 1 teaspoon sugar (optional)
– Salt, to taste
– Pepper, to taste
Method
1. Rinse the cranberries under cold water and drain them.
2. In a food processor, combine the cranberries, red onion, red pepper, and jalapeño peppers. Pulse until the mixture is finely chopped.
3. Transfer the chopped mixture to a bowl. Stir in lime juice, cilantro, and optional sugar.
4. Taste the salsa. Add salt and pepper as needed. Adjust seasoning to your preference.
5. Chill in the refrigerator for at least 30 minutes before serving.
