Ingredients
– 150 g butter, softened
– 1 cup sugar
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour
– 1/4 teaspoon salt
– 1 cup dried cranberries, chopped
– 1/2 cup walnuts, chopped
– 1 egg, beaten
– Icing sugar for dusting
Method
1. Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
2. In a bowl, cream together the softened butter, sugar, and vanilla until light and fluffy.
3. Gradually mix in the flour and salt until a dough forms.
4. Stir in chopped cranberries and walnuts until evenly combined.
5. Roll the dough into a log, chill for 30 minutes, then slice and bake for about 12-15 minutes until golden. Dust with icing sugar after cooling.
