Ingredients
– 1 kg chicken (cut into pieces)
– 2 tablespoons vegetable oil
– 1 large onion (chopped)
– 2 cloves garlic (minced)
– 1 tablespoon curry powder
– 400 g canned tomatoes (diced)
– 300 ml chicken broth
– 1 tablespoon raisins
– 1 teaspoon salt
– 1 cup cooked rice
Method
1. Heat vegetable oil in a large pan over medium heat.
2. Add chopped onion and cook until it becomes soft.
3. Stir in minced garlic and curry powder, cooking for another minute.
4. Add diced tomatoes, chicken broth, chicken pieces, raisins, and salt; bring to a boil.
5. Reduce heat to low, cover, and simmer for 30 minutes. Serve over cooked rice.
