Ingredients
– 1 cup cottage cheese
– 4 large eggs
– 1/2 cup diced bell pepper
– 1/4 cup shredded cheese
– 1/4 cup chopped spinach
– 1/4 teaspoon salt
– 1/4 teaspoon pepper
– 1/4 teaspoon garlic powder
– 1 tablespoon olive oil
– Cooking spray
Method
1. Preheat the oven to 180°C. Spray a muffin tin with cooking spray.
2. In a bowl, whisk together the cottage cheese and eggs until smooth.
3. Stir in the diced bell pepper, shredded cheese, chopped spinach, salt, pepper, and garlic powder.
4. Fill each muffin cup with the mixture until they are about 3/4 full.
5. Bake for 20-25 minutes, or until the tops are golden and set.
