Ingredients
– 2 cups corn (fresh, frozen, or canned)
– 1 red bell pepper, diced
– 1 cup cherry tomatoes, halved
– 1 small red onion, finely chopped
– 1 avocado, diced
– 1/2 cup fresh cilantro, chopped
– 2 tablespoons lime juice
– 2 tablespoons olive oil
– Salt, to taste
– Pepper, to taste
Method
1. Start by cooking the corn if using fresh. Boil or steam it for about 5 minutes until tender. Drain and let it cool.
2. Dice the red bell pepper and chop the red onion. Halve the cherry tomatoes and dice the avocado.
3. Combine all the chopped ingredients in a large mixing bowl. Include the corn once it’s cooled.
4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour this dressing over the salad.
5. Toss everything together gently until well mixed. Add chopped cilantro on top before serving.
