– 2 cups fresh corn kernels
– 1 cup heavy cream
– 1 cup milk
– 4 large egg yolks
– ½ cup sugar
– 1 teaspoon vanilla extract
– ¼ teaspoon salt
– 4 tablespoons brown sugar

Method

1. Preheat the oven to 160°C. Prepare a baking dish by placing it in a larger pan filled with water.
2. Blend corn kernels, heavy cream, and milk in a food processor until smooth.
3. Strain the mixture into a bowl, discarding the solids. Whisk in egg yolks, sugar, vanilla, and salt until completely combined.
4. Pour the mixture into ramekins. Then, put the ramekins in the water-filled baking dish.
5. Bake for about 40-45 minutes, or until set. After cooling, sprinkle brown sugar on top and caramelize with a torch or broiler.
