Ingredients
– 500 g puff pastry
– 250 g cream cheese
– 1/4 cup icing sugar
– 1 tsp vanilla extract
– 1 egg
– 1 tbsp milk
– 1/2 cup fresh berries (like blueberries or raspberries)
– 1/4 cup jam (like raspberry or apricot)
– 1 egg wash (1 egg beaten with 1 tbsp water)
– Optional: icing sugar for dusting
Method
1. Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper.
2. Roll out the puff pastry on a floured surface and cut into squares about 10 cm each.
3. Mix cream cheese, icing sugar, and vanilla extract in a bowl until smooth. Place a spoonful of this mixture in the center of each pastry square.
4. Add a few fresh berries on top of the cream cheese mixture. Fold the corners of the pastry to the center and pinch to seal.
5. Brush each pastry with the egg wash and bake for 15-20 minutes until golden brown. Remove from the oven and drizzle with jam. Sprinkle with icing sugar if desired.
