Ingredients
– 450 g raw shrimp, peeled and deveined
– 1 cup shredded coconut
– 1/2 cup breadcrumbs
– 1/4 cup plain flour
– 1 egg
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon garlic powder
– Vegetable oil for frying
– Lime wedges for serving
Method
1. Start by setting up three bowls. Place flour in the first, beaten egg in the second, and mix coconut, breadcrumbs, salt, pepper, and garlic powder in the third.
2. Coat each shrimp first in flour, then dip it into the egg, and finally roll it in the coconut mixture. Make sure each shrimp is well covered.
3. Heat oil in a frying pan over medium heat. Add enough oil to cover the bottom of the pan.
4. Once oil is hot, carefully add the shrimp in batches, frying them for 2-3 minutes until golden brown. Flip them halfway through to get an even color.
5. Remove cooked shrimp from the pan and place them on paper towels to drain excess oil. Serve with lime wedges on the side.
