Coconut Rice Recipe
Ingredients
1 cup jasmine rice
400 ml coconut milk
1 cup water
1 tsp salt
1 tbsp sugar
1 tbsp vegetable oil
2 tsp lime juice
Fresh cilantro (for garnish, optional)
Method
Rinse the jasmine rice under cold water until the water runs clear.
In a pot, combine the rinsed rice, coconut milk, water, salt, and sugar.
Bring the mixture to a boil over medium heat.
Once boiling, reduce the heat to low. Cover the pot and let it simmer for about 15-18 minutes.
After cooking, remove from heat, add lime juice, and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro if desired.
