Delicious Coconut Maple Glazed Carrots Recipe & All-Clad Giveaway

Ingredients

– 450 g baby carrots
– 2 tablespoons olive oil
– 60 ml maple syrup
– 1 tablespoon apple cider vinegar
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
– 1 tablespoon butter
– 30 ml water
– Fresh parsley for garnish

Method

1. Preheat your oven to 200 degrees Celsius.
2. In a large mixing bowl, toss the baby carrots with olive oil, maple syrup, apple cider vinegar, salt, pepper, and thyme until evenly coated.
3. Spread the carrots onto a baking tray in a single layer.
4. Add the butter and water to the tray, and then bake for about 25-30 minutes. Stir the carrots halfway through cooking.
5. Once done, remove them from the oven and sprinkle fresh parsley on top before serving.
