Method
1. Heat olive oil in a large pan over medium heat.
2. Add the chopped onion and cook until soft, about 5 minutes.
3. Stir in the garlic, ginger, and curry powder. Cook for about 1 minute.
4. Add the diced chicken and cook until browned. Then, pour in the coconut milk and bring to a gentle simmer.
5. Mix in the spinach and sliced bell pepper. Cook until the vegetables are tender. Serve with cooked rice.
