Ingredients
– 1 cup of green tomatoes, chopped
– 1 cup of green bell peppers, chopped
– 1 cup of red bell peppers, chopped
– 1 cup of onions, chopped
– 2 cloves of garlic, minced
– 1 cup of apple cider vinegar
– 1 cup of sugar
– 1 tablespoon of salt
– 1 teaspoon of mustard seeds
– 1 teaspoon of turmeric powder
Method
1. Start by preparing all the vegetables. Chop green tomatoes, bell peppers, onions, and mince the garlic.
2. Combine the vegetables in a large bowl. Mix in salt and let it sit for about 2 hours to draw out the moisture.
3. After 2 hours, drain the mixture well. Rinse with cold water if desired to lessen the saltiness.
4. In a pot, mix apple cider vinegar, sugar, mustard seeds, and turmeric powder. Bring this mixture to a boil.
5. Add the drained vegetables to the pot. Stir and let it simmer for 10 minutes before transferring to jars.
