Chow Chow Recipe
Ingredients
– 1 cup diced green tomatoes
– 1 cup diced bell peppers
– 1 cup diced onions
– 1 cup diced cucumbers
– 2 tablespoons salt
– 1 cup apple cider vinegar
– 1 tablespoon sugar
– 1 tablespoon mustard seeds
– 1 teaspoon turmeric
– 1 teaspoon black pepper
Method
1. Start by combining the diced green tomatoes, bell peppers, onions, and cucumbers in a large bowl. Stir in the salt and mix well.
2. Allow the mixture to sit for about 2 hours. This will draw out moisture.
3. Afterward, rinse the vegetables under cold water to remove excess salt. Drain them well.
4. In a pot, combine the apple cider vinegar, sugar, mustard seeds, turmeric, and black pepper. Heat the mixture until it comes to a simmer.
5. Add the drained vegetables to the pot. Cook for 10 minutes, stirring occasionally. Remove from heat and let cool before serving.
