Delicious Chorizo Potato Cakes Recipe For Flavorful Meals

Ingredients

– 400 g potatoes, peeled and cut into chunks
– 200 g chorizo, diced
– 1 small onion, finely chopped
– 1 clove garlic, minced
– 1 teaspoon paprika
– 1 egg
– 1 cup breadcrumbs
– 2 tablespoons olive oil
– Salt and pepper to taste

Method

1. Bring a pot of water to a boil and add the potato chunks. Cook until tender, about 15 minutes. Drain and let them cool.
2. Heat a pan over medium heat, add olive oil, then sauté the onion and garlic for a few minutes until soft. Add chorizo and cook until crispy.
3. In a bowl, mash the cooled potatoes, then mix in the chorizo, onion, garlic, paprika, egg, salt, and pepper until combined.
4. Shape the mixture into small cakes and cover with breadcrumbs.
5. In the same pan, heat more olive oil and cook the cakes for 4-5 minutes on each side until golden brown.
