Chorizo Potato Cakes
Ingredients
500 g potatoes, peeled and diced
200 g chorizo, diced
1 cup breadcrumbs
1 egg
1 cup grated cheese
1 onion, finely chopped
2 cloves garlic, minced
1 tsp smoked paprika
Salt, to taste
Pepper, to taste
Method
1. Boil the diced potatoes until soft. Drain and mash them in a large bowl.
2. Heat a pan over medium heat and cook the diced chorizo until it starts to brown. Add the onion and garlic, cooking until soft.
3. Combine the potato, chorizo mixture, egg, breadcrumbs, cheese, paprika, salt, and pepper. Mix until everything is well blended.
4. Shape the mixture into small cakes. Place them on a plate.
5. Heat oil in a frying pan over medium heat and cook the cakes for about 4 minutes on each side or until golden brown.
