Ingredients
– 300 g pasta
– 250 g chorizo sausage, diced
– 200 g mushrooms, sliced
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 can (400 g) diced tomatoes
– 250 ml vegetable broth
– 1 teaspoon dried oregano
– Olive oil
– Fresh parsley, chopped (for garnish)
Method
1. Boil water in a large pot. Add pasta and cook according to package instructions until al dente. Drain and set aside.
2. Heat a splash of olive oil in a frying pan over medium heat. Add onion and garlic, cooking until soft.
3. Stir in the diced chorizo and sliced mushrooms. Cook for about 5 minutes until the chorizo is crispy and mushrooms are tender.
4. Pour in the diced tomatoes and vegetable broth. Sprinkle with oregano, allowing it to simmer for 10 minutes.
5. Combine the cooked pasta with the sauce. Serve hot, garnished with fresh parsley.
