Ingredients
– 200g chocolate biscuits, crushed
– 75g butter, melted
– 400g cream cheese, softened
– 200ml thickened cream
– 100g powdered sugar
– 1 tsp vanilla extract
– 2 tsp peppermint extract
– 200g dark chocolate, melted
– 50g chocolate mint candies, chopped
– Extra whipped cream for topping
Method
1. Start by preheating your oven to 160°C.
2. Mix the crushed biscuits with melted butter in a bowl. Press this mixture into the base of a springform pan.
3. Whip the cream cheese until smooth. Add powdered sugar, vanilla extract, and peppermint extract. Combine well.
4. Slowly fold in the melted dark chocolate and thickened cream until it is evenly mixed. Add the chopped mint candies for extra flavor.
5. Pour the cheesecake mixture over the biscuit base. Bake for 30 minutes, then let it cool in the fridge for several hours or until set. Top with whipped cream before serving.
