Ingredients
250 g plain flour
75 g icing sugar
125 g unsalted butter (softened)
1 large egg yolk
2 tsp vanilla extract
1 tbsp cocoa powder
1 cup raspberry jam
Icing sugar for dusting
A pinch of salt
Method
1. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
2. Mix the flour, icing sugar, cocoa powder, and a pinch of salt in a large bowl.
3. Add the butter, egg yolk, and vanilla extract. Combine everything until a dough forms.
4. Roll out the dough on a floured surface to about 0.5 cm thick. Cut out shapes using cookie cutters.
5. Place the cookies on the baking sheet. Bake for 10-12 minutes. Let them cool, then spread jam on half of the cookies and top with the others. Dust with icing sugar before serving.
