Ingredients
240 ml water
50 g cocoa powder
180 g all-purpose flour
200 g granulated sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
120 ml vegetable oil
1 tsp vanilla extract
2 large eggs
Method
Start by preheating your oven to 180°C. Line a muffin tin with cupcake liners.
Bring water to a boil. Once it boils, remove it from the heat, then whisk in cocoa powder until smooth.
In a large bowl, combine flour, sugar, baking soda, baking powder, and salt. Stir well to mix all dry ingredients evenly.
Add vegetable oil, vanilla extract, eggs, and the cocoa mixture to the dry ingredients. Mix until just combined; do not overmix.
Divide the batter evenly into the cupcake liners. Bake for about 18-20 minutes or until a toothpick inserted comes out clean.
