Ingredients
– 120 g butter (softened)
– 1 cup brown sugar
– 1 egg
– 1 tsp vanilla extract
– 1 ½ cups all-purpose flour
– 1 tsp baking powder
– ½ tsp baking soda
– ½ tsp salt
– 1 cup dried cranberries
– ½ cup chocolate chips
Method
1. Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.
2. In a large bowl, cream together softened butter and brown sugar until light and fluffy.
3. Add the egg and vanilla extract, mixing well until combined.
4. Gradually incorporate the flour, baking powder, baking soda, and salt. Stir until a dough forms.
5. Fold in the dried cranberries and chocolate chips. Scoop tablespoons of dough onto the prepared tray, leaving space between each cookie. Bake for 10-12 minutes or until edges are golden.
