Ingredients
– 1 cup (150g) dried cranberries
– 1 cup (200g) granulated sugar
– 1/2 cup (113g) unsalted butter, softened
– 1 egg
– 1 teaspoon vanilla extract
– 2 cups (250g) all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1/2 cup (90g) chocolate chips
– Extra sugar for sprinkling
Method
1. Preheat your oven to 180°C (350°F) and line a baking tray with baking paper.
2. In a large bowl, mix the softened butter and granulated sugar until creamy and smooth.
3. Add the egg and vanilla extract, then beat well to combine.
4. Gradually stir in the flour, baking powder, and salt, mixing until just combined. Fold in dried cranberries and chocolate chips.
5. Use a spoon to scoop dough onto the baking tray, sprinkle with extra sugar, and bake for 10-12 minutes until golden.
