Ingredients
– 1 cup (150 g) dried cranberries
– 1 ¾ cups (225 g) all-purpose flour
– ½ teaspoon baking soda
– ½ teaspoon salt
– 1 cup (200 g) granulated sugar
– ½ cup (115 g) softened butter
– 1 large egg
– 1 teaspoon vanilla extract
– ⅔ cup (100 g) chocolate chips
– 1 tablespoon icing sugar for dusting
Method
1. Preheat the oven to 180°C. Line a baking tray with baking paper.
2. In a bowl, combine flour, baking soda, and salt. Whisk these ingredients well.
3. In a separate bowl, cream the sugar and butter until smooth. Then add the egg and vanilla extract, mixing until combined.
4. Gradually add the flour mixture to the wet mixture. Stir in dried cranberries and chocolate chips until evenly mixed.
5. Drop spoonfuls of dough onto the baking tray. Bake for 10-12 minutes until edges are golden. Let cool and dust with icing sugar.
