Ingredients
– 125 g butter, softened
– 100 g brown sugar
– 50 g white sugar
– 1 large egg
– 1 tsp vanilla extract
– 200 g plain flour
– ½ tsp baking soda
– 100 g chocolate chips
– 500 ml vanilla ice cream
– 12 cookie pieces
Method
1. Preheat the oven to 180°C. Line a baking tray with baking paper.
2. In a mixing bowl, cream together the softened butter, brown sugar, and white sugar.
3. Add the egg and vanilla extract to the mixture. Stir well until smooth.
4. Mix in the plain flour and baking soda. Fold in the chocolate chips.
5. Drop spoonfuls of the cookie dough onto the prepared tray. Bake for about 10-12 minutes. Once cool, assemble the ice cream sandwiches with vanilla ice cream between two cookies.
