Ingredients
– 400 ml cream
– 2 large egg whites
– 1 cup sugar
– 100 ml cherry juice
– 1 cup pitted cherries (fresh or frozen)
– 200 g dark chocolate
– 2 tablespoons water
– 1 teaspoon vanilla extract
– 1 pinch salt
Method
1. Whip the cream in a bowl until soft peaks form.
2. In another bowl, beat the egg whites until they are fluffy. Gradually add sugar while continuing to beat until stiff peaks form.
3. Melt dark chocolate with water in a microwave or stovetop. Stir in cherry juice, vanilla extract, and salt once melted.
4. Fold the chocolate mixture into the whipped cream gently. Then, fold in the egg whites carefully to maintain fluffiness.
5. Add pitted cherries into the mix and pour everything into a loaf pan. Freeze for at least four hours until set.
