Ingredients
- 500 ml thickened cream
- 1 cup icing sugar
- 1 teaspoon vanilla extract
- 2 cups pitted cherries (fresh or frozen)
- 1 tablespoon lemon juice
- 3 egg whites
- 1/4 cup caster sugar
- Chocolate shavings (for topping)
- A pinch of salt
- Extra cherries (for garnish)
Method
- Beat the thickened cream, icing sugar, and vanilla extract until soft peaks form in a bowl.
- In another bowl, mash the cherries with lemon juice until a chunky mixture forms.
- Whisk egg whites with a pinch of salt until soft peaks appear. Gradually add the caster sugar while mixing until the mixture is stiff and glossy.
- Gently fold the cherry mixture into the whipped cream. Then, combine this with the egg whites carefully to keep it fluffy.
- Pour everything into a loaf pan lined with plastic wrap. Freeze for at least 4 hours before serving. Top with chocolate shavings and extra cherries when ready to enjoy.
