Ingredients
– 2 cups rolled oats
– 1 cup almonds, chopped
– 1/2 cup maple syrup
– 1/4 cup olive oil
– 1/2 teaspoon salt
– 1 teaspoon vanilla extract
– 1/2 cup dark chocolate chips
– 1/4 cup pumpkin seeds
– 1/2 teaspoon cinnamon
Method
1. Preheat the oven to 180°C. Line a baking tray with baking paper.
2. In a big bowl, mix together the rolled oats, almonds, salt, and cinnamon.
3. In another bowl, whisk the maple syrup, olive oil, and vanilla extract until well combined.
4. Pour the wet mixture over the dry ingredients and stir until everything is coated evenly.
5. Spread the mixture on the baking tray and bake for 20-25 minutes. Stir halfway through and let it cool before adding chocolate chips and pumpkin seeds.
