Ingredients
- 1 pork tenderloin (about 500g)
- 2 teaspoons chipotle powder
- 1/4 cup pomegranate juice
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons balsamic vinegar
- 1/4 cup pomegranate seeds (for topping)
- Fresh parsley (for garnish)
Method
- Preheat the oven to 200°C (400°F).
- Rub the pork tenderloin with olive oil, chipotle powder, salt, and pepper.
- In a small bowl, mix together the pomegranate juice, honey, and balsamic vinegar.
- Place the pork in a baking dish and pour the pomegranate mixture over it.
- Roast for 25-30 minutes or until the pork is fully cooked. Sprinkle pomegranate seeds and parsley on top before serving.
